What does "kids' food" mean, anyway?

Last week's Dining & Wine section of the NY Times ran a great article that examines the history of children's menus and asks how and why palate deadeners like fried chicken fingers became kids' food staples.

 

The most compelling point of Don't Point That Menu at My Child, Please speaks to something we at Chow Baby often wonder: why don't parents invest in their children's appetites in the same way that they invest in the rest of their development? Mentally and physically challenging our kids is a must, but we rarely take an active role in helping our kids develop their palates, the very thing that fuels their bodies, minds and spirits.
